Sweet 'n Sour Chicken {Microwave}

This is a quick and delicious entree you can have ready in less than 15 minutes! 

Not only do you make it in the microwave, you use frozen chicken tenders (or nuggets)....I believe it's all about sitting around the table together and not all about your meal being 'gourmet'.

Sometimes FAST is what you need...so here you go.  You may have all the sauce ingredients on hand right now...I love that about any recipe!!

I've had this recipe in my files for many years...given to me by a great cook and friend, Sandy.  She had written the word "Excellent" on the recipe. 

I used crushed pineapple in its own juice to help lighten the calories a tad. It doesn't call for much sugar, but you could substitute with xylitol and a little molasses for the brown sugarif you'd like....whatever it takes to meet your dietary needs.

Hope your family loves this one so much they'll want it again and again. I really appreciate the simplicity of the recipe. And it tastes awesome too!!!

SWEET 'N SOUR CHICKEN 

1/4 c. (scant) brown sugar 
1 Tb. cornstarch
1 - 2 Tb. apple cider vinegar
3 Tb. ketchup
2 Tb. soy sauce
1 (8 ozs) can crushed pineapple
1 (12 ozs) pkg. frozen breaded chicken fillets or nuggets
Hot cooked rice, if desired

In medium microwavable bowl, mix together brown sugar, cornstarch, vinegar, ketchup, soy sauce and juice from pineapple. 

Microwave mixture on high, uncovered, for 3 - 4 minutes or until mixture boils and thickens, stirring twice.  Stir in pineapple; set aside.  

Arrange chicken in single layer on microwavable plate. Cover with paper towel; microwave according to package directions. Spoon sauce onto the chicken. 

Microwave on high for 1 - 2 minutes until heated through.

Serve with rice if desired.

Yield: 4 servings
